This is a fun and tasty dinner AND it's detox compliant!
Ingredients:
1 Lb ground turkey (organic if possible)
1 lb bag Cauliflower Rice (fresh or frozen)
1/2 Cup Water
Olive Oil Spray
Homemade Taco Seasoning (can be prepared ahead)
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon black pepper
Toppings:
Diced Avocado
Black Beans
Chopped Tomatos
Shredded Romaine
Black Olives (in water, not in vinegar)
Preheat oven to 425
Lightly spray rimmed sheet pan with cooking spray
Spread riced cauliflower out on the sheet pan
Sprinkle 1 Tbsp of the taco seasoning and lightly spray with olive oil ( just a few pumps)
Toss cauliflower and seasoning on the pan and re-spread to an even layer
Roast for 15-25 min, until desired texture, turning over with a large spoon halfway through.
Brown 1lb of ground turkey in a large skillet
Add taco seasoning (either all or half of what is left, depending on your desired level of flavor/spice) & 1/2 Cup of water. Simmer for 10 minutes.
Fill bowls with 1- 1 1/2 cups of the Roasted Cauliflower Rice, 1/2 - 1 cup of turkey taco meat, and layer on desired toppings!
