Sick of chicken 🐔? We eat a LOT of chicken around here and sometimes you just need to mix it up!
This sautéed shrimp 🍤 with baby spinach, artichoke hearts, yellow peppers and my FAVE gf capellini pasta from Le Veneziane by Molino di Ferro is a quick and easy dish that you can pull together on a weeknight and have it look 👀like a “weekend” meal 🙌🏻.
This dish is suuuper flexible, so use whatever veggies you have on hand. I sautéed the shrimp first, then set it aside while the veggies took their turn in the pan. I used about 2 tbsp of olive oil to sautéed some chopped shallots and garlic, then added the veggies and seasoned them with salt, pepper & garlic powder. I added added fresh lemon juice 🍋 and white wine (to taste) to the simmering veggies before adding in the cooked shrimp and pasta for a quick turn in the pan. If you want the sauce a bit richer in flavor, you can add butter. More of a “process” than a recipe, so lmk if you have questions!
#leveneziane pasta is from Italy 🇮🇹 and really there’s nothing else like it IMO. I haven’t found it in any major markets but I see that Wegmans carries it. I actually stumbled upon it in a small market near my ski house near Bethel, Maine Barking Dawg Market and I try to stock up wherever l’m there! You can find it on amazon. In addition to the capellini, they are the only GF brand that I have found that makes ditalini. I also highly recommend their no bake lasagna noodles!
